Umeda Cheese Labo

At Umeda Cheese Labo, they serve cheesecakes that are made with meringue, custard, and six kinds of cheese with individual characteristics. These are milky mascarpone; gouda that’s finely balanced sweetness and umami; slightly sour cheddar; creamy camembert; strong, salty parmesan; and gorgonzola with unique stimulating sharpness.

The cheesecake is best eaten with spoons (¥216 each). Six types of soft and creamy cheese lend different flavor profiles to the cheesecakes!

People who have tried the cheesecakes become addicted to the soft texture. There are many kinds of cheese—from those that are already familiar to the palate and those which have interesting flavors.

Precious cheese cake 301

The Melting Basque Cheesecake is made with the cooking method of the Basque region of Spain. It has a soft, melt-in-your-mouth texture because of the 301 grams of Hokkaido’s fresh cream that’s used to make it. That is three times the quantity of a regular cheesecake! The black burnt part gives this cheesecake an interesting flavor and the roasted aroma is the secret to its taste.

The flavor is rich and fresh at the same time. The burnt surface is what adds a punch to the flavor of the cheese.
