This Artsy Cafe in Japan Is Known for Their Fluffy Pancakes

How to get there: It’s a 5-minute walk from JR Himeji Station.
At cafe Rei, the pancakes are made by the owner who used to work as a pastry chef. Taking care to use ingredients that are produced in Himeji city, they don't use additives either. But what sets cafe Rei apart is the fact that their pancakes are very fluffy. This is because the meringue’s temperature is carefully maintained during the cooking process.

Plain Pancakes HONEY (Single ¥800, Double ¥1,500) is made with Yume Bijin, an egg brand produced in Yumesaki City, Ijinkan, an original flour of the Hyogo Prefecture, and natural salt produced in the town of Ieshima, which are all in the Hyogo Prefecture. It’s best enjoyed with pure honey and original egg yolk butter.
When in season, locally produced strawberries are used to create Fraisier (¥1,200).
The pancakes are smooth and fluffy because they’re strained once before they’re baked.
This IG-worthy space was decorated by the owner themselves.
