Patisserie Etonne is a shop that opened in 2016 and is famous for selling matcha chocolate cakes that melt in your mouth. Mr. Seiji Tada, its owner and patissier, received training in France and worked for a long time at Kobe Kitano Hotel as the chef patissier. This was how he mastered his skill in making delicate cakes at his shop.
Besides its texture and melt-in-your-mouth quality, the shop’s matcha chocolate cake has several other characteristics that make it a favorite among customers.
Matcha Chocolate Cake (¥1,728)
It has a diameter of 12 centimeters and combines the flavors of white chocolate from Spain and Japanese matcha. A quarter of the cake is ¥432.
The shop uses Uji matcha from “Yamamasa-Koyama-en” to give the cake its balanced bitterness.
The cakes’ moist texture is a result of baking them in hot water.
Once the cakes are out of the oven, they are left to cool down for about one or two hours at room temperature. Afterwards, the customers can enjoy the matcha chocolate cakes and savor their creamy melt-in-your-mouth goodness!
The shop’s ceiling is painted in a deep blue hue.
