D-Steak is an award-winning restaurant opened by Daisuke Yamane, who is the chef of PONTE VECCHIO. Famous for serving machine-grilled steaks that extract umami flavors and keep the tenderness of the meats, it is meant to be a casual place where many people can enjoy good meat.
Here's a look at how they prepare their dishes:
The aged inner round meat contains a bright red lean meat whose flavor is not too overpowering. Each sinew is cut carefully so that customers can relish and enjoy every bite.
The D-cutter cuts the meat in five-millimeter slices.
The D-Jira Roaster rotates the meat so that every part is grilled equally.
The steak sauce is also served in special ceramic containers to keep it searingly hot.
Charcoal-grilled Kuroge Wagyu Akami Steak (200g, ¥3,564)
The taste of the meat, upon dipping it in the sauce, exceeds expectations. Everything is done carefully and thoroughly at the restaurant, so that customers can fully enjoy the tender meat and umami flavors.
"While round meat is mainly used for stews, we came up with a way to prepare it as grilled steak. Our dishes are pretty affordable since we'd like people of all ages to enjoy our restaurant's meat," says the chief chef, Shinji Yokoyama.
Aside from this, the restaurant also serves other delicious dishes like beef rice consisting of meat chunks.
Charcoal Grilled Lamb with Sheep's Milk Sauce and Herb Sauce (¥2,700)
The orange and green Japanese peppercorn sauce is a great accent in the Charcoal Grilled Duck (¥3,132).
Beef sauce rice (¥648, dinner time). During lunchtime, it is available at ¥1,080 and comes in a large size with salad.
Its diner-like exterior is quite hard to miss.
